- Half a Chinese cabbage cut into slices
- 1 chicken bone
- Half a carrot cut into thin slices or cubes
- 1/4 beancurd cut into cubes
- 2 tablespoons of light soya sauce

1. Boil chicken bone for a few minutes and drain it.
2. Put chicken bone into a pot filled with approximately 4 to 5 cups of water.
3. Add cabbage and carrot into the pot.
4. Boil it for 30 minutes and turn the heat down for at least another 20 minutes.
5. Add the beancurd and boil for another 10 minutes.
6. Add light soya sauce to taste.

How to Serve Homemade Chicken Soup

Serve this easy homemade chicken soup hot, garnished with fresh dill or chopped parsley. I like to also serve this recipe with homemade biscuits or a simple grilled cheese sandwich.

You can even serve this soup in bread bowls as a fun presentation. This soup is a meal in itself because of the vegetables and pasta.

Chicken Soup Recipes

What's the one kind of simple soup recipe we turn to when we're fighting off a cold? Why, it's an easy chicken soup recipe, of course! We love it when we get to lay down on the couch with a movie and big ol' bowl of chicken soup for a lazy day in. Whether we go for a European favorite like our Chicken and Dumplings (page 15) or you go for a touch of nostalgia with Mom's Chicken Soup (page 18), you know that you'll feel warm and cheery by the time you eat up that last spoonful. In fact, you might even need to go back for seconds!

Melt 2 tablespoons of butter or margarine in a large saucepan over medium heat. Add 1 cup chopped onion, 1 cup chopped carrots, and 1/2 cup chopped celery. Saute for about 10 minutes, until the onions and celery are clear, and the carrots are soft. Add the chunked chicken, and season with salt and pepper to taste. Transfer the chicken/vegetable mixture to a medium to large pot. Add 2 cans of chicken broth, and 1 1/2 cups of uncooked noodles. Place over medium heat, and bring to a boil. Reduce heat to low, cover pot with a lid, and simmer about 15 minutes, until the noodles are cooked through and all the flavors are blended. Ladle soup into individual serving bowls. Serve with saltine crackers. Guaranteed to make you feel better, if you are feeling under the weather!

Shahar's Yemeni chicken soup with zhug and lahoh

There’s Jewish chicken soup and then there’s Jewish chicken soup. Shahar’s Yemeni version made with hawaij, a spice mix containing turmeric, cumin seeds, cloves and cardamom seeds, is something we could eat every day.

  • 4 large, yellow-fleshed potatoes (preferably a Moroccan variety)
  • 2 red onions
  • 2 tomatoes
  • ½ butternut pumpkin (squash)
  • 1 carrot
  • 1 bunch parsley
  • 1 tbsp black peppercorns
  • 4 chicken leg quarters, separated into thigh and drumsticks
  • 1 tsp sugar
  • salt, to taste
  • 1 tbsp ground turmeric
  • 1 tbsp cumin seeds
  • 1 tsp cloves
  • seeds from 2 cardamom pods
  • 3 bunches coriander
  • 5 cloves garlic
  • 5 red chillies
  • ½ tbsp cumin seeds
  • 2 cloves
  • seeds of 1 cardamom pod
  • 250 g (9 oz/1⅔ cups) plain (all-purpose) flour
  • 2 tsp dried yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 16 g baking powder

Cook's notes

Oven temperatures are for conventional if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml 1 tablespoon equals 20 ml 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.


  1. Peel and chop the potatoes roughly chop the onions and tomatoes. Cut the butternut pumpkin into large pieces, with the skin still on, and remove the seeds. Peel and chop the carrot. Spread the bunch of parsley over the bottom of a heavy-based, lidded saucepan, add the peppercorns, then lay the pieces of chicken on top, skin side facing upwards. Cover the ingredients with water, then bring to the boil, skimming off any foam that rises to the surface. Reduce the heat to its lowest setting, then add the vegetables and cook for 1 hour.
  2. At this point, add the sugar and season with salt. Grind the turmeric, cumin seeds, cloves and cardamom seeds to a fine powder using a mortar and pestle, and add the spice mix to the soup. Stir well and continue to cook for 30 minutes.
  3. While waiting for the soup to boil, make the lahoh. Make a smooth batter from the plain (all-purpose) flour, dried yeast, 500 ml (17 fl oz/2 cups) of lukewarm water, sugar and salt. If using an electric mixer, whisk the batter for 5 minutes if working by hand, whisk for 8 minutes. Add baking powder and whisk it quickly into the mixture. Set the batter aside at room temperature for 30 minutes, covered with a clean, dry tea towel.
  4. Meanwhile, for the zhug, roughly chop the coriander (cilantro). Using a hand-held blender, purée thr garlic cloves and the red chillies to a smooth paste, then add the coriander and blitz until finely chopped. Grind cumin seeds, cloves and the cardamom seeds to a fine powder, then mix the spices into the garlic paste. Season to taste with salt. The zhug will keep for weeks in a sterilised, airtight jar in the refrigerator. Note: its flavour is very potent!
  5. Heat a pancake pan (or a non-stick frying pan) over a medium heat. Add a ladleful of lahoh batter and cook for 3 minutes, without flipping, until the underside is pale golden brown and white holes appear on the top. Transfer the lahoh to a plate suspended over a pan of hot water to keep warm while you make the rest. Before making the next bread, cool the pan under the cold tap (this will stop the next bread sticking to the pan), then return the cooled pan to the heat, and make another bread. Repeat this process with the remaining batter.
  6. To serve, stir 2 tablespoons of zhug into the soup and eat with lahoh or other Arabic flatbread.
